how much can you typically back up onto a CD? is there a One-to-One ratio on the backing up?

Generally yes, unless you use something to compress the data. I suppose you could just use something like WinZip to compress your data first, and then burn it to a CD. But then again - blanks are so cheap I wouldnt bother.
