I got my first batch of cucumbers in from the garden this week...
so I made pickles... I've not been able to eat them (as they need to age...)
I've never done it before... and found it to be not nearly as time consuming as my mother made it sound like when I was a kid... (she made home made dill pickles once, and I begged her to do it again, over and over, she never did.)
so, sterilize jars, (I used the sterilize button on the dishwasher.)
leave cucumbers in ice water while you are doing that.
Take a nap.
make a concoction of 3 parts water, 1 part vinegar, bring to a boil.
cut up cucumbers into spears.
put clove of garlic and sprig of dill into jar, fill to top with cut cucumbers, add another clove of garlic, and the stalk of the dill to the top of the jar.
Fill jars with boiling brine.
put lids on jars, place in boiling water for 10-15 minutes. remove from boiling water and allow to seal.
Simple...
There are the pickles, and the rest of the haul from my garden (so far.)
I still have more green beans out there... I just didn't feel like picking them all this morning (probably go back out this afternoon some time.)
Next on the list, is making some salsa, or spaghetti sauce when the tomato's start coming in. (and possibly canning that too... we'll see.) |
