Well, I bought a dehydrator not long ago, so have been trying out all sorts of jerky recipes (mainly beef jerky).

And, as is my way, I have been experimenting with various marinades for the meat.

As we speak I have a batch of experimental jerky drying at the moment, but thought I would see what people use to flavour their meat before jerking.

My current batch used the following mix as flavouring:

500mL Vinegar
500mL Lime Juice
Crushed Toobs

For the meat I used thinly cut Beef steak (about 5mm thick), and soaked it in the marinade for 3 hours. Then sliced into 1cm wide slice (across the grain) and it is now drying.

I think the vinegar taste has overpowered the other flavours, but it will be interesting to see what it ends up like.


Anyways, what recipes do you use when jerking your meat?
