Most commonly used by me...
CTRL-ESC to bring up the START MENU. But there are tons that I use. I am a keyboard freak - and old school DOS boy!
Together
F2 - Rename
CTRL-SHIFT-F10 - Right Click
Alt F4 - Close Window
Not Together...
Alt Space X - Maximize
Alt Space N - Minimize

I'm a keyboard hound myself. I have a real hard time when I am not on one of my own machines, because all of my programs have about a million of my own custom keyboard shortcuts. I get on a different computer, and it really messes me up. My favorites..
I use all the above(Except the Max/Min, I didn't now those) Plus:
Alt-Enter = Full Screen
Ctrl-V = Paste
Ctrl-X = Cut
Ctrl-C = Copy
Shift-Del = Permenant Delete - Skips Recycle Bin
And tons of Program Specific ones like Ctrl-O open file, Ctrl-P Print, etc.

winkey + pause break brings up the System Properties
Winkey + E gives you Explorer
Winkey + F = Find
Winkey + R = Run
Oh and we all know what CTRL + ALT+ DEL does [} ]

Here's a couple that make browsing the 'net without a mouse a little easier, though you probably know these already. In IE, ctrl-n opens a new window (I use this all the time), and backspace will move back in your history (same as clicking the Back button). You can also replace the Back and Forward buttons by using alt-left arrow, alt-right arrow respectively. ctrl-home will take you to the top of the page and ctrl-end will take you to the bottom (great for quickly switching to links at the top or bottom of a long page).

also, when your using IM, pressing ESC will close the current chat window. Quick fix for typing in class and the teacher looks over your shoulder. [} ]

While in IE
ALT-A to bring down Favorites menu
or if you are like me and just type the address in everytime
F6 will highlight the address bar, so that you can overtype what was there before.
F5 refreshes the current page
Ctrl + D bookmarks site
Ctrl + N opens new browser window

I never new that about F6. That is a handy shortcut. I usually just use Ctrl-O, but if you only want to change part of the address, F6 is the way to go.
Print Screen = Screenshot.
I'm sure you all knew that one but,
Ctrl+Print Screen = Screenshot of active window

F5 will also refresh your registry when you edit it so the changes will take effect.
F6 will highlight you start button while on your desktop.
