Recently I've taken up making dinner in our clay-pot. Initially our current shortage of money was the reason - the meat called "potbits" here is about a third to fourth of the better cuts.


    Basically one use a (lidded) pot of clay.
    It must be soaked in water for at least 15 minutes before you add all the stuff into it.
    Then you put it a cold oven and set it to 220 Celsius/ 425 Fahrenheit for 90 minutes.
    Note that no fluids are added. The water-soaking and the ingredients own juices suffice.


So far I use what I have made several variations, but the basic is (added in this order - bottom to top)

    Cheap meat (basically a dead cow) in about inch-sized cubes. About 8-10 of them. I've taken whole slabs of meat to. Bits turns out better though.
    Coarsely grounded black and red pepper
    Two halves of onion, or many very small onions
    3-4 potatoes depending on their size(unpealed)
    3 medium sized fresh mushrooms
    2 chopped carrots and one chopped parsnip
    2 whole tomatoes that I just cut an X in at the top.
    Sprinkle a little olive oil over this
    Add some coarse salt (called sea-salt here for some reason Rolls Eyes)
    About a cup of diced Feta cheese


The finished meal is great. And it is so easy to make. Also note that all ingredients are usually very cheap. And in this case you get far more taste than you pay for, so to speak.



Variations:
Take away the potatoes on do them on the side (this means a little of the whole idea falls flat - but anyway) and add more root vegetables. Fennel and turnip/rooted celery is awesome. I usually just cram it all in there whether it have room or not.

What I will try in the future:
I've bought much of that cheap meat when it was on sale. I divided it up and put the bits in the freezer. Then I'll do it all in the morning (adding the meat still frozen) and put it in the oven and program it to start at say 1530 and turn of at 1700. the only problem I foresee is that 15 minute water-soaking...

Anyway: This is a great site for clay-pot related stuff. It even explains how/why this works so good.

Wow, we just got one of those pots last weekend from my MIL. We've been wondering what to make in it...
We'll defiantly give this one a shot. Thanks for the idea!!

except for the pot... add some random canned veggie and some water and you have the usual kitchen dump stew
