Fresh Carrot Chutney (serves 4-6 as a chutney; 2 as a salad)
This is tangy and tart as an intense little salad on its own, yet served with other strong flavors it becomes a refreshing taste to bring balance to a meal.
1 cup coarsely grated carrots (2 medium)
2 Jalapeno chilis, minced (In India, this chutney would be made using fresh green cayenne chilies. ) You may use whatever fresh hot chilies you prefer.
1/2 tsp salt
3 T fresh lime juice
2 T chopped, fresh coriander (cilantro) leaves.
If using a food processor, place the carrots and chilies in the processor and process for 30 seconds. Tranfer to a bowl and stir in the salt and lime juice.
If using a large mortar and pestle, pound the chilies with the salt to almost a paste. Add the grated carrot and pound to soften and blend, Transfer to a bowl and stir in the lime juice.
Just before serving, stir in the coriander leaves.
This is a great accompaniment to a plain rice and many of your own choices.. |

Well, heres a few recipes for ya
ANZAC Bisuits (An Aussie Favourite)
Mix 1 cup Rolled Oats, 1 cup Plain flour, 1 cup Brown sugar and 3/4 cup dessicated coconut in a bowl.
Melt 125grams of butter and 1 tablespoon of Golden Syrup in a saucepan. If you don't have Golden Syrup, honey can also work (Maple Syrup may also work). While this is melting, mix 2 tablespoons of water with 1 teaspoon of BiCarb Soda (Baking Powder). When the butter and syrup have melted and you've mixed them, add the water/soda mix. This will cause the butter/syrup to froth.
Add the contents of the saucepan to the dry mix, and mix together (I use a food processor for this). When mixed, place dobs onto a greased tray (I find they cook better if flattened). Cook in a oven preheated to "moderate-slow" (I use 180degrees celcius) for 20 minutes. They will be a bit soft when fresh out of the oven, but harden on cooling.

(Recipe modified from this one).
Frittata
This can have any ingredients you like, but the following is a favourite way of mine (this recipe can really bring out ones creativity ). It is an oven-cooked omelette, and very yummy (if you enjoy that sorta thang).
Dice up some bacon and onion, and cook in a frying pan, and boil up some potatoes.
In a bowl beat some eggs and milk (I use 4 eggs and roughly a cup of milk). I also add in some mixed herbs for flavour The better the eggs are beaten, the lighter and fluffier the frittata.
In a round baking dish, put down a layer of bacon/onion. Then cut the potatoes into thin slice, and place down a layer of these on the bacon. Add another layer of bacon/onion (repeat until close to the top of the pan, or until you run outta ingredients. Then pour the egg mix, allowing space for the frittata to rise.
Cook at 150 degrees celcius for around an hour. The top seems to be the last to cook, so use as an indication when ready.
As an alternative, I cook these in a muffin pan for individual serves, which is useful for taking to work for lunch
Must experiment with mixing cheese through this, or sprinkling on top, as a change of pace.
Caramel Slice (another Aussie Fave)
Base:
Mix 2/3 cup of Brown sugar, 2/3 dessicated coconut, 1/3 cup plain flour and 1/3 cup of self raising flour in a bowl. Using your hands, rub in 80grams of butter until texture is even. Cover the base of a lightly greased biscuit tray with the mix and press down. Bake for 10-12 minutes at 170 degrees celcius (until slightly browned). Remove from Oven and let cool.
Caramel:
In a saucepan mix 395grams (1 can) of Condensed Milk, 30grams of butter and 2 tablespoons of Golden Syrup (see above for alternatives). Cook on medium heat and stir until thinkened. Pour this over the base, and put in oven for another 10-12 minutes (caramel should start to brown a bit at the edges).
Topping:
Melt a block of chocolate (200grams) and pour over the top.
Let cool, then cut into squares and serve (or hide from friends and family and eat it all yourself). It may be easier to cut is still a bit warm, or using a hot knife.
WARNING: Not good for those on low sugar diets
Next time I make these, I am going to prepare some espresso and mix it through the caramel. As if the sugar buzz wasn't enough
Chinese Steamed Buns
Mix 1 tablespoon of yeast, 1 teaspoon of sugar, 1/2 a cup of plain flour and 1/4 of a cup of warm water. Let this stand for 30 minutes.
Then mix in 1 and 1/2 cups of plain flour, 2 tablespoons of sugar, 1/2 a cup of warm water and 1 tablespoon of oil. Knead until surface of dough is smooth and elastic. Roll over in a greased bowl and stand until tripled in size (about 2.5 to 3 hours).
After this, punch down the dough and spread on a floured board. Spread 1/2 a teaspoon of baking soda over surface if the dough, and knead for 5 minutes.
Roll mix into balls, and stand on wax paper square until doubled in size (30 minutes).
Cook in bamboo steamer for 15 minutes.
As an alternative for these, flatten the ball out until nice and thin (edge should be thinner than the middle). Put a spoonful of a savoury meat dish (such as honey pork or savoury mince) onto the dough, and curl edges around the meat so that the edges meet. I then roll them in my hand so that the dough completely covers the meat. Steam as above. My next experiment with these is to use a filling of ham, cheese, pineapple... Mmmm... Strawberry Pie
The pie that killed a thousand diets
Ingredients
* 1 Pie crust; baked
* 1 1/2 qt Strawberries
* 1 1/2 cup Sugar
* 1/3 cup Cornstarch
* 1/2 cup Water
* 3 cup Cool Whip lite
Instructions
* Chop 2 cups of berries. In saucepan combine sugar and cornstarch. Slowly add water to combine smoothly. Add chopped strawberries. Cook, stirring constantly until mixture thickens and boils.
* Cool in refrigerator for about 1/2 hour.
* Pour about 3/4 of mixture into prepared piecrust. Stand up whole strawberries in syrup (to fill crust). Pour remaining syrup over strawberries.
* Chill until firm - about 3 hours.
* Spread cool whip over top of pie and serve. |
