Quick and easy Bake for a Braai (barbeque...have no idea how to spell it)

Potatoe Bake

4 Potatoes
2 Onions
1 Packet Brown Onion Soup
250ml Fresh Cream
150g Grated Cheese

Peel and slice the potatoes and onion into rings. Layer the potato slices and onion rings alternatively, sprinkling brown onion soup powder in between layer each individual layer. Pour over the cream, sprinkle with cheese and bake at 180 degrees (centigrade) for 33-45 minutes until potatoes are soft.

I will give you my recipe in a simple form. It is very easy to make substitutions and additions; for example, I often use ground turkey instead of beef, and will some times add in sausage. Lately, I have been cooking 3 or 4 carrots in with it as well (which tastes great).

Ingrediants:

* 1-1.5 lbs ground beef
* 1 green pepper
* 1-2 onion(s)
* 1.5-2 jars sphaghetti sauce (Classico Spicy Red Pepper goes great)
* Seasonings to taste (I like a garlic pepper mix we used to buy in CT and basil and sometimes oregano)
* 1-1.5 lbs of elbows (macaroni)

1. Brown the beef, and chop up the pepper and onion into small pieces (as well as any other vegetables you are going to add), start the water boiling for the macaroni.
2. Drain the beef, and put the chopped veggies in with it.
3. Sautee the veggies as long as you like, but remember that they will continue to cook in the sauce so you do not need to leave them in too long before adding the sauce. Lower the heat to medium low, and if desired cover.
4. Cook the sauce as long as you like, and once you figure you want another 10 minutes or so start the macaroni. Generally I play this by ear and don't cook the sauce too much longer than the elbows take.
5. Drain the macaroni, mix it all together, and serve.
6. Save your leftovers, and to reheat just throw it in the microwave or reheat in a frying pan over medium-low to medium heat.

Melting cheese on it tastes good, as well as parmesan. Generally, I eat it as a one dish meal, and clean my plate or bowl with a piece or three of bread. This will serve 5-8 people

Sothwestern blackbean and corn salad

2 cans whole kernel corn
1 can black beans
1 can sliced black olives
5 green onions, diced
1 small tomato, cubed
1 tsp diced garlic
juice from 1/2 lime
1/4 cup chunky salsa
3Tsp half & half
paprika to taste

mix all ingredients in bowl, chill for 20-30 minutes to thicken before serving

CLUB SODA WAFFLES

2 cups Bisquick mix
1 egg
½ cup canola oil
1-1/3 cups club soda

Mix well all ingredients, pour into hot waffle iron. Batter will not save so cook all batter and you can freeze cooked waffles.

I also know quite a few drink recipes, and a Prairie Oyster recipe to follow it up the next day. Wink

Beer Bread

3 cups self rising flour
1 cup sugar
1 bottle beer (your choice)

preheat oven to 375

mix ingredients, pour into a greased loaf pan, cook for 35-45 minutes

Very good, very simple... If you can stand to cook a beer, instead of drink it Smile

--and nobody noticed how the date went from jun 2003 to june 2005 all of a sudden.. bam-resurection....

THO.. the new recipees are great... down side.. the chicken parm recipee from page one is gone Sad

Peach and Pecan Pie

Pastry for 9" pie

Filling:
1/4 c Sugar
3 tb All-purpose flour
1/4 ts Nutmeg
1 ds Salt
1/2 c Light corn syrup
3 Eggs
3 c Peaches; peeled and cubed
1/4 c Butter; melted

Topping:
1/2 c Coarsely chopped pecans
1/4 c All-purpose flour
1/4 c Firmly packed brown sugar
2 tb Butter; softened

Prepare pastry for one crust pie. Heat oven to 400º. In a large bowl, combine sugar, 3 tablespoons flour, nutmeg, salt, corn syrup and eggs; beat at medium speed one minute. Stir in peaches and 1/4 cup butter. Spoon into pastry lined pan. In a small bowl, combine all topping ingredient; mix well. Sprinkle over peach filling. Bake at 400º for 35 to 45 minutes or until center is set. Serve warm or cool with whipped cream if desired.

Package of chicken wings
Garlic salt
Soy sauce
Sesame oil

Cut wings at the joints so that you have a mini drumstick, middle wing, and wingtips. Discard the wingtips (if you desire or use them fer making chicken stock). In cool water, rince remaining chicken parts and set aside in a collander to drain. Wash all surface areas including the knife/cutting board of chicken runoff. Make sure you wash yer hands carefully, too! Wink Smile

Fire up skillet/frying pan/wok/dutch oven and spray with non-stick spray or coat with some olive oil.
Put chicken wings in pan/pot and brown all sides.
Sprinkle about 1/2 teaspoon of garlic salt.
Add about 1/4 cup of soy sauce and 2 tablespoons of sesame oil to chicken.
Coat all pieces by stirring.
Cover and turn heat to medium low.
Continue cooking fer about 10-15 minutes.
Serve while hot! Enjoy! Big SmileTongue Smile

A much loved Chili recipe. Texas style, no beans. Takes 2-3 hours of chopping and pot simmering, but worth it!

Backdoor chili

****PART 1****
1 To 2 tablespoons cooking oil
3 lb Beef chuck tender, cut into
1/2-inch cubes
2 cn (14 1/2 oz.@) beef broth
1 cn (8 oz.) tomato sauce
4 ds Tabasco
1 ½ T Onion powder
¾ t Cayenne
2 t Beef bouillon granules (low sodium is best)
1 t Chicken bouillon granules
****PART 2****
¾ t Garlic powder
1 ½ T Ground cumin
¾ t White pepper
6 T Chili powder
Salt to taste

Heat oil in Dutch oven. Cook beef in oil, until beef is browned. Stir in remaining ingredients of Part 1. Heat to boiling; reduce heat. Simmer uncovered about 1 1/2 hours, adding water as needed, until beef is tender. Stir in the ingredients of Part 2. Simmer uncovered about 30 minutes or until desired consistancy is reached.

Believe it or not, I love to cook... not for myself, this sucks, but for the family...

It's a lot of work to do it right (and engineers have to do it right <grin>). More importantly, as I have started to cook for the family on a more regular basis, it increases my appreciation for the spouse, who has to do it daily, and she has some pretty mean skills in the kitchen Laughing
